Recipe Details

  • Servings: 4
  • Prep Time: 15 minutes
  • Cook Time: Approximately 45–60 minutes
  • Total Time: Approximately 1 hour–1 hour 15 minutes
  • Cooking Method: Stovetop with a broiled cheese topping

Ingredients

  • 4 chicken breast fillets
  • 1¼ cups uncooked long-grain brown rice ( or white is fine also)
  • 500 ml c beef broth
  • 2 medium white onions, thinly sliced
  • 3 cloves garlic, minced
  • 1–2 tablespoons extra virgin olive oil
  • 5 teaspoons butter, divided (3 teaspoons + 2 teaspoons)
  • A splash of red wine vinegar
  • 2 sprigs fresh rosemary
  • ½ teaspoon dried thyme, or to taste
  • Salt and freshly ground black pepper, to taste
  • ½–1 cup shredded mozzarella cheese
  • ¼–½ cup freshly grated Parmesan cheese
  • Fresh chives, finely chopped

Instructions

Step 1: Season and sear the chicken

Season the chicken breast fillets with salt, pepper, dried thyme and a drizzle of olive oil.

Heat a large oven-safe skillet or casserole over medium heat. Sear the chicken for approximately 4–5 minutes per side, until golden brown.

Remove the chicken from the pan and set aside.

Step 2: Caramelize the onions

In the same pan, add the thinly sliced onions and a splash of red wine vinegar, scraping up the delicious browned bits from the bottom.

Cook for approximately 5 minutes, then reduce the heat to low and continue cooking until the onions become soft, golden and caramelized, approximately 20–30 minutes.

Add the minced garlic and cook for another minute.

Step 3: Add the rice, broth and butter

Stir the uncooked rice into the caramelized onions.

Pour in the beef broth and add 3 teaspoons of butter, stirring gently to combine.

Step 4: Return the chicken to the pan

Nestle the seared chicken breast fillets into the rice mixture and add the fresh rosemary sprigs.

Bring to a gentle simmer, cover with a tight-fitting lid and reduce the heat to low.

Cook for approximately 20 minutes, or until the rice is tender and the chicken reaches an internal temperature of 165°F (74°C).

Add a little extra warm broth if the rice needs more moisture. If the chicken cooks before the rice, remove it temporarily to keep it juicy.

Step 5: Add the finishing butter and cheese

Once the rice is fully cooked, remove the lid.

Add the remaining 2 teaspoons of butter, distributing small pieces across the top of the chicken and rice.

Sprinkle with shredded mozzarella and freshly grated Parmesan cheese.

Finish with freshly chopped chives.

Step 6: Broil until golden

Preheat your oven’s broiler to high.

Place the uncovered, oven-safe casserole under the broiler for approximately 2–3 minutes, watching closely, until the cheese is melted, bubbly and beautifully golden.

Step 7: Serve and enjoy!

Carefully remove the casserole from the oven and allow it to rest for a few minutes.

Serve warm and enjoy!

My Tips for the Perfect French Onion Chicken & Rice

Don’t rush the onions! Slowly caramelizing them creates that rich, sweet and savoury flavour that makes French onion recipes so delicious.

Use the right rice. Regular long-grain white rice works well for this recipe. Other varieties may require different liquid amounts and cooking times.

Don’t skip the butter. Adding butter while the rice cooks brings extra richness, while the finishing butter adds another delicious layer of flavour before broiling.

Keep the chicken juicy. Chicken breast fillets can dry out if overcooked, so check for an internal temperature of 165°F (74°C).

Make it extra cheesy! Mozzarella gives you that irresistible melted cheese topping, while Parmesan adds a savoury finish.

Storage and Reheating

Allow leftovers to cool promptly and refrigerate in an airtight container within 2 hours of cooking.

Store in the refrigerator for up to 3–4 days.

Reheat thoroughly until steaming hot throughout, adding a small splash of broth if needed.
