Easy Dutch Oven Shredded Beef Tacos

If you’re looking for an easy, flavorful dinner that practically cooks itself, these Dutch Oven Shredded Beef Tacos are a must-try! With just a handful of ingredients and only a few minutes of prep, you’ll have tender, fall-apart shredded beef that’s perfect for taco night. Simply season the roast, place it in a Dutch oven, and let the oven do the rest.

👉 I make this recipe in my favorite Dutch oven, which distributes heat beautifully and makes the beef incredibly tender. You can find the one I use here:

This has become one of our family’s favorite meals because it’s simple enough for a busy weeknight but delicious enough to serve when friends and family come over.

Ingredients

  • 1 chuck roast (about 3–4 pounds)
  • 1 package Siete Taco Seasoning
  • Olive oil spray

For Serving

  • Corn tortillas
  • Shredded cheese
  • Fresh guacamole (homemade is my favorite!)
  • Salsa (homemade if you have it)
  • Pickled or fresh jalapeños
  • Fresh cilantro
  • Plain Greek yogurt (a healthier substitute for sour cream)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Lightly spray your Dutch oven or oven-safe pot with a lid using olive oil. (I linked my favorite Dutch oven above if you’re looking for a great one!)
  3. Rub the entire chuck roast with the Siete Taco Seasoning, coating all sides evenly.
  4. Place the seasoned roast into the Dutch oven and cover tightly with the lid.
  5. Bake for about 1 hour per pound, or until the beef is fork-tender and shreds easily.
  6. Remove the roast from the pot and shred it using two forks. Return the shredded beef to the cooking juices and toss to coat for maximum flavor.
  7. Warm your corn tortillas and fill them with the shredded beef.
  8. Top with shredded cheese, fresh guacamole, salsa, jalapeños, cilantro, and a dollop of plain Greek yogurt.

Tips

  • Don’t worry about adding broth or water—the chuck roast naturally releases plenty of flavorful juices as it cooks, creating tender, juicy shredded beef.
  • The beef is ready when it easily pulls apart with a fork. If it’s still tough, let it cook a little longer.
  • Keeping the shredded beef in the cooking juices helps it stay incredibly juicy and flavorful.
  • Leftovers are delicious in burrito bowls, quesadillas, nachos, salads, or even on baked potatoes.
