πŸ“ Easy Strawberry Cobbler (Gluten-Free)

πŸ“ Easy Strawberry Cobbler (Gluten-Free)

There’s just something about a warm strawberry cobbler that feels like summer to me 🀍

The strawberries get soft and jammy, the top turns golden, and the whole thing is just cozy in the best way. It’s one of those desserts that looks beautiful but is actually so simple to make.

This version is completely gluten-free, and honestly… you’d never know.

And if you serve it warm with a scoop of vanilla ice cream melting over top?
It’s next level 🍨✨

✨ Why I Love This Recipe

  • It’s gluten-free but still tastes like a classic cobbler
  • Made with simple, everyday ingredients
  • Perfect for spring and summer
  • Comes together quickly
  • So good served warm with vanilla ice cream

πŸ“ Strawberry Cobbler (Gluten-Free)

Serves: 6–8

Ingredients

  • 3 tablespoons unsalted butter
  • 1 cup all-purpose gluten-free flour
  • ¼ cup oat flour
  • ½ cup + 2 tablespoons cane sugar (divided)
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ¾ cup unsweetened almond milk (plus a little more if needed)
  • ½ teaspoon vanilla extract
  • 5 cups fresh ripe strawberries, hulled and diced

πŸ‘©πŸ»‍🍳 How I Make It

  1. Preheat your oven to 375°F.
  2. Melt the butter
Add the butter to an 8x8 baking dish and place it in the oven for about 5–7 minutes, just until melted.
Once it’s melted, tilt the dish so the bottom is evenly coated.
  3. Make the batter
In a bowl, whisk together the gluten-free flour, oat flour, ½ cup of the sugar, baking powder, and salt.
Add in the almond milk and vanilla, and mix until smooth.
If it feels a bit thick, just add a splash more milk until it looks like a pourable pancake batter.
  4. Assemble (don’t stir 🀍)
Pour the batter right over the melted butter — don’t mix it.
Scatter the strawberries evenly over top, then sprinkle with the remaining sugar.
  5. Bake
Bake for 45–50 minutes, until the top is lightly golden and the strawberries are bubbling around the edges.
It might look slightly soft in the center — that’s totally normal. It will set as it cools.
  6. Serve
Let it cool slightly, then scoop into bowls and serve warm.
I always add vanilla ice cream on top… highly recommend 🍨

🍨 My Favorite Way to Serve It

Warm, straight from the oven, with vanilla ice cream melting into it…
It’s honestly the best part 🀀

🌿 A Few Tips

  • Use really ripe strawberries for the best flavor
  • Don’t mix the layers — it comes together as it bakes
  • Add a little extra milk if your batter feels too thick
  • Let it sit for a bit before serving so it sets nicely

πŸ’— Final Thoughts

This is one of those recipes that feels simple but still a little special.
Perfect for a cozy night at home or when you want something sweet without a lot of effort πŸ“✨
